Making Pasta

There are many recipes..250 g flour/250 g semolina/ 3 eggs/8 egg yolks is the Jamie Oliver recipe for 4 people

The main thing seems to be that this is a dry dough...It should not be sticky...dust with flour as you put it through the rollers...dust the rollers...a sugar shaker filled with flour may be the best way.

After you have put the sheets through the cutters, separate the strands and put them on a drying rack as you finish off the rest of the dough.

Cook for 4 minutes max
